Chicken Avocado Quesadilla
I love quesadillas. One of the best things about these little tortilla sandwiches is how adaptable they are. Cheese only. Chicken and cheese. Bean and cheese. Roasted vegetables and cheese. Potatoes and cheese...... What kind of cheese? The options are endless; cheddar, jack, pepper jack, bleu cheese, fontina, swiss, Parmesan, queso blanco.... In search of an early dinner, I took out some leftovers and got to brainstorming. I'm trying to lose weight, so I switched out my usual canola for a double spritz of no-stick cooking spray and came up with Chicken Avocado Quesadillas. I used half a cup lowfat grated for a lower ...
Cherie Burbach & 21 Simple Things You Can Do To Help Someone With Diabetes
Today my good friend, Cherie Burbach, author of 21 Simple Things You Can Do To Help Someone With Diabetes, is stopping by Grab A Pan to tell us a little bit about her book. The purpose of the book is to help people who are unfamiliar with diabetes to better understand the disease, in order to help their loved ones better deal with the challenges the disease presents. In addition to an interview, Cherie is sharing her quick and easy recipe for Black Bean and Chicken Stew. Thanks, Cherie! Eliza, at Homemom3, is giving away a copy of Cherie's book. Head ...
Yogurt Pancakes with Chocolate Chips
Have you had the opportunity to check out the Food Network magazine? The May 2010 issue comes with a little 50 Pancake and Waffle recipes book. My daughter, Sarah, and I were looking at it last night and we decided we'd like to try both the yogurt and the chocolate chip versions. I remembered that I had a small plain yogurt in my fridge, so a combination of the Basic, Yogurt, and Chocolate Chip recipes seemed perfect to me. The yogurt makes for a thick, fluffy pancake. If you have find that your pancakes aren't cooking all the way through before ...
Sierra Nevada’s 30th Anniversary Celebration Brews
I love beer. I live about a mile, as the crow flies, from the Sierra Nevada Brewery and Tap Room. In addition to their well-known Pale Ale, Sierra Nevada carries a number of beers year round including Porter (my favorite), Stout, Kellerweis, and Torpedo Extra IPA. When I go out, I get the Filtered Wheat, on tap. Yum. Did I mention how much I love beer? As part of Sierra Nevada's 30th Anniversary celebration, they have 4 new collaboration beers to be released this year. The first of these beers, called Fritz & Ken's Ale, was released last month. The rest will ...
Review: Vega Whole Food Vibrancy Bars
I'm a runner or to be more accurate, a recently re-committed runner. I run mid-morning, when I've got the kids off to school, my work email caught up, and Supernatural is on. (I like running while Dean and Sam fight monsters. It's my thing.) Running at this point in the morning can bring up some issues for me. By "issues," I mean burps. If I eat too close to a run, I burp. Uncomfortable. I decided that I had a few choices: *Get up earlier to eat *Skip the meal until afterward *Eat something like an energy bar before a run Getting up early is ...
Korean Tacos
This morning I attended the 6th grade Pancake Breakfast fundraiser at my daughter's school. While there, I chatted with my friend Kelly about his ramen recipe (recipe and photos to follow at a later date) and asked if he'd ever tried Korean Tacos. He had not. I haven't either and after seeing a Facebook friend's photos of them, I was eager to get my hands on one. About 2 hours later, Mom and I were walking through the newest Farmer's Market in town (Chico, CA, Butte College Chico Center parking lot), and at the northeast corner I saw a Korean food ...
H2Organics Nutrient Enhanced Water: A Review
I've tried a few of the new flavored waters out there. Some are tasty, but some too sweet, some are high in calories, which is not something that I want in a water. My kids and I got to try some samples of H2Organics Nutrient Enhanced Water for review. These waters are made with a "multi-filtered reverse osmosis purified water." They are low calorie, low carbohydrate, and low in sugar. I really liked them and so did the girls. They are both refreshing and flavorful. Sarah liked packing on in her lunch for school. The waters are developed in six formulas: Relax, ...
Recipe: Homemade Taquitos
Here's another recipe that starts with the slow cooker Mexican chicken that I told you about a few days ago. If you don't have time to make up the chicken in the slow cooker, you can cook 3 chicken breasts (or equivalent amount chicken thighs) on the stove top or use a pre-cooked roasted chicken from your grocer's deli. Taquitos 1 lb cooked, shredded chicken, drained (too much moisture is dangerous when frying) 12 corn tortillas canola for pan toothpicks Preheat oven to 350 F. Pour about 1/4 of canola oil in the pan, heat to medium high. While pan is heating, steam tortillas. I use a plastic steamer ...
Mexican Spice Mix Recipe
I love to make Mexican food. It's my favorite kind of food. I use a dry spice blend in most of my Mexican cooking. It's very adaptable. You can use it with chicken broth for an enchilada sauce (add a touch of tomato paste if you like a tomato-y sauce), use it to season taco meat, and it makes a great dry rub for meat on the grill. More than anything I use it for making a stewed chicken recipe in the slow cooker. I buy a bag of frozen chicken breasts or tenders, dump the entire bag into the crockpot ...
Frontera Chipotle Salsa – A Review
Chips and salsa. A classic combination... and one I'm enjoying this evening. Yum. I picked up a jar of Frontera Gourmet Mexican Salsa in the Chipotle flavor a couple of weeks ago. The salsa was developed by Chef Rick Bayless - he modeled it after a salsa he tasted in Veracruz. It has this wonderful smokiness to it with a bit of bite. The ingredients include tomatillos, tomatoes, onions, garlic, and chipotle chilies. The first time I used it, I poured it over chicken breasts that I cooked in the slow cooker for enchiladas. Yum. If you'd like to try this easy ...

Cholesterol is a bad thing, right? Apparently not always. I read a piece on Everyday Health called “The Truth Behind Six Cholesterol Myths,” and here’s what I learned, in a nutshell…. *The body needs a certain amount of Cholesterol to operate properly. *Cholesterol becomes a problem when the liver is no longer able to keep up... Gardening and cooking go hand in hand. I live in an apartment, so my gardening space is limited, but I am still able to grow plenty of herbs and tomatoes for my family. I even get a few lemons off my minature lemon tree each year. This year I want to add another minature tree, probably a lime. In my area, the weather has been warm enough to get a few...
